Cowboy Shakshuka: A Sneak Peek from the V6 Kitchen

Hey everyone! We’ve been busy in the kitchen developing recipes for our upcoming V6 cookbook. We’re still in the early stages of recipe testing, but Cowboy Shakshuka was too good to wait to share! This dish is hearty, smoky, and packed with flavor, and it’s perfect for breakfast, brunch, or anytime you need a little comfort food. The blend of crispy bacon, poached eggs, and rich tomato sauce with a touch of spice will have you coming back for more!

Ingredients:

  • 4 slices bacon, cut into ¼” pieces

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 4 cloves garlic, minced

  • ½ tbsp achiote paste*

  • ½ tbsp oregano

  • 1 (28 oz) can San Marzano tomatoes, crushed

  • 3 tbsp chipotle in adobo sauce, chopped

  • Salt and pepper, to taste

  • 6 eggs

  • Cotija or feta cheese, for topping

  • Cilantro, for garnish

Instructions:

  1. In a large skillet over medium heat, cook the bacon pieces until they start to crisp up.

  2. Add the chopped onion, bell pepper, and a pinch of salt. Sauté until the onions become translucent.

  3. Stir in the minced garlic and cook for 1-2 minutes, until fragrant.

  4. Add the achiote paste* and sauté for another minute, letting it infuse the flavors.

  5. Pour in the crushed San Marzano tomatoes with their juices, followed by the chipotle in adobo and oregano. Stir to combine, scraping up any browned bits from the bottom of the pan. Season with salt and pepper to taste.

  6. Let the sauce simmer for about 10 minutes, stirring occasionally, until it turns a deeper red color.

  7. Create small wells in the sauce and carefully crack the eggs into them. Season with salt and pepper. Cover the pan and simmer until the eggs are cooked to your desired doneness.

  8. Top the shakshuka with crumbled Cotija or feta cheese and fresh cilantro. Serve with roasted potatoes or crusty bread for a satisfying meal.


*A Note on Achiote Paste:

If you’re not familiar with achiote paste, it’s a traditional Mexican ingredient made from annatto seeds, garlic, and other spices. It adds a rich, earthy flavor to dishes like this one. You can find it at Mexican markets or specialty grocery stores, but if you’re unable to get your hands on it, don’t worry—it’s totally fine to omit it! The dish will still be delicious without it.
